About the profession
Mezcal maestros (palenqueros) produce traditional mezcal in Oaxaca using earth-pit roasted agave, horse-milled or tahona-crushed. Export boom 2015-2024 brought prices up. Certified palenques earn significantly more than backyard producers. Most US jobs are importer/brand roles.
